  • 4 tsp olive oil
  • 4 flounder filets
  • Salt and pepper to taste
  • cup grated parmesan cheese
  • ¼ cup Italian-style seasoned breadcrumbs
  • 3 garlic cloves minced
  • 2 tbsp parsley freshly chopped
  • 1 lemon juiced and zested

Instructions

  • Season the filets with salt and pepper on both sides and preheat the oven to 350 F.
  • In a medium-sized bowl, mix the breadcrumbs, minced garlic, grated parmesan, lemon zest, and chopped parsley.
  • Press the filets onto the breadcrumb mixture on both sides until completely covered in it.
  • Place the filets on a baking sheet previously brushed with one tsp olive oil and drizzle 3 tsp olive over the filets.
  • Drizzle the filets with lemon juice and bake for 20 minutes or until completely cooked.
