How To Make Carrot Cake Banana Bread

  1. Grease and flour a 9×5-inch loaf pan and preheat the oven to 350 F.
  2. Whisk the all-purpose flour, oat flour, baking soda, pumpkin pie spice, and salt together in a medium-sized bowl. Set aside.
  3. In a large bowl, mix the mashed bananas, brown sugar, egg, vanilla extract, oil, applesauce, and milk using a whisk, until well combined.
  4. Fold in the shredded carrots and coconut.
  5. Mix in the dry ingredients using a spatula or wooden spoon, until just combined. Do not overmix.
  6. Pour the batter into the prepared pan and bake for 40-55 mins, or until a toothpick inserted in the middle comes out clean.
  7. Let the loaf cool down in the pan for 10 minutes, unmold, and transfer to a cooling rack to cool down completely.
