  • 1 cup granulated sugar
  • ½ cup pumpkin puree
  • 1 large egg, room temperature
  • 1 ½ tsp pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
