Equipment

Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1 large egg, beaten
  • 1 ¼ cup buttermilk
  • 1 tsp vanilla extract
  • 2 ½ tbsp melted butter
  • 4 tbsp sugar

Instructions

  • Whisk the dry ingredients in a medium-sized bowl.
  • In a second bowl, mix the buttermilk, egg, vanilla extract, and sugar.
  • Pour the wet ingredients into the dry and mix just until combined.
  • Mix the melted butter into the pancake batter just until combined.
  • Heat a skillet or griddle over medium-low heat and spray with cooking spray or melted butter.
  • Pour ¼ cup batter into the hot skillet and cook until bubbles appear on the top of the pancakes, about 2-3 minutes.
  • Flip and cook for 2-3 minutes on the other side.
