Ingredients

For the dressing:

  • ¼ cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • Freshly ground black pepper to taste
  • ¼ cup grated Parmesan cheese

For the salad:

  • 3 cups Romaine lettuce, chopped
  • 1- 15 oz can chickpeas, drainedand rinsed
  • 1 cup thick-cut ham, chopped
  • 5 sliced Provolone cheese, chopped
  • 1 cup grape tomatoes, halved
  • ½ cup pepperoncini peppers, sliced
  • cup black olives, sliced
  • ¼ cup red onion, thinly sliced

Instructions

  • Mix the olive oil, red wine vinegar, honey, Dijon mustard, Parmesan cheese, salt, and pepper in a small jar or measuring cup until well combined.
  • Place the lettuce, ham, cheese, chickpeas, tomatoes, black olives, slied pepperoncini, and red onion in a large salad bowl.
  • Pour the dressing over the salad ingredients and toss.
