Preheat the oven to 350 F. In a bowl, mix the dry ingredients.
Using a whisk, mix the wet ingredients in a different bowl.
Pour the wet ingredients into the dry and stir together until combined. Do not overmix
Line a muffin tin with paper liners and divide the batter evenly between the 12 cups
Make the cream cheese filling by combining mixing the softened cream cheese with powdered sugar, flour, and salt.
Add about 2 tbsp of filling to the center of each muffin using a piping bag or ziplock bag
Bake for 15-20 mins until a toothpick inserted in the middle comes out clean.
