Ingredients

For the muffins:

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 ½ cups pumpkin puree
  • 1 large egg room temperature
  • ¼ cup unsalted butter melted
  • 1 ½ tsp vanilla extract

For the cream cheese filling:

  • 8 oz cream cheese room temperature
  • ½ cup powdered sugar
  • 2 tsp flour
  • Pinch of salt

Instructions

  • Preheat the oven to 350 F. In a bowl, mix the dry ingredients.
  • Using a whisk, mix the wet ingredients in a different bowl.
  • Pour the wet ingredients into the dry and stir together until combined. Do not overmix
  • Line a muffin tin with paper liners and divide the batter evenly between the 12 cups
  • Make the cream cheese filling by combining mixing the softened cream cheese with powdered sugar, flour, and salt.
  • Add about 2 tbsp of filling to the center of each muffin using a piping bag or ziplock bag
  • Bake for 15-20 mins until a toothpick inserted in the middle comes out clean.

Notes

  • Do not overmix the muffin batter or they will turn out tough and dense.
  • Make sure the eggs, cream cheese, and butter are room temperature before you start cooking.
