Ingredients

  • 1 ½ lb bay scallops
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • ½ tsp dry parsley
  • ¼ tsp red pepper flakes
  • Juice of one lemon
  • Salt and pepper to taste

Instructions

  • Rinse the bay scallops with water, drain them, and pat them dry.
  • In a microwave safe dish, melt the butter along with the minced garlic, dry parsley, red pepper flakes, salt, and pepper.
  • Place the dry scallops in a baking dish. Do not overlap them, they must be in one layer.
  • Drizzle the melted butter mixture over them.
  • Place in the oven and broil for about 5-8 minutes depending on your oven. They are ready when they are slightly brown on top.
  • Serve with toasted crusty bread and lemon wedges.

Notes

  1. Dry the scallops as much as you can. We want them broiled, not boiled.
  2. Mince the garlic as finely as possible. Bay scallops are small and you don’t want a large chunk of garlic in them.
  3. Broil them just until slightly brown on top or they will over cook.
