Ingredients

  • 2 cups cooked chopped chicken
  • ½ cup mayonnaise
  • 2 tsp whole grain mustard (or Dijon)
  • ¼ cup celery choppe
  • 2 green onions thinly sliced
  • 2 green onions thinly sliced
  • 2 tbsp dill pickles chopped
  • 1 tbsp capers drained
  • 1 tsp fresh dill chopped
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the chopped cooked chicken, mayo, chopped celery, sliced green onions, whole grain mustard, chopped pickles, capers, and chopped fresh dill. Use as filling for sandwiches.

Notes

  • Chop all ingredients roughly the same size for a uniform salad.
  • Don’t forget to season the salad with salt and pepper.
  • If you want a lower calorie salad, use Greek yogurt instead of mayo, or a combination of both.
