Ingredients
2
boneless, skinless chicken breasts cut into strips
1
tbsp
Cajun seasoning
2
tbsp
butter
8
oz
linguine
½
cup
heavy cream
¼
cup
sun-dried tomatoes
chopped
½
tsp
Italian seasoning
½
cup
parmesan cheese
grated and more for serving
Salt and pepper to taste
2
green onions
sliced thinly for garnish
Instructions
Cook the linguine according to package instructions, drain, and set aside.
While the pasta is cooking, melt the butter in a large skillet and brown the sliced chicken breasts along with the Cajun seasoning until fully cooked.
Stir in the sun-dried tomatoes, heavy cream, Italian seasoning, Parmesan cheese, salt, and pepper to taste.
Simmer until slightly thickened and mix in the cooked fettuccine. Serve with sliced green onions on top and extra parmesan cheese if desired.
Notes
Make sure the skillet and the butter are hot before adding the chicken so it can brown properly.
If your butter burns regularly, try adding a bit of olive oil to it.
Parmesan cheese is a bit salty, so be careful not to add too much extra salt.
