Ingredients

  • 2 boneless, skinless chicken breasts cut into strips
  • 1 tbsp Cajun seasoning
  • 2 tbsp butter
  • 8 oz linguine
  • ½ cup heavy cream
  • ¼ cup sun-dried tomatoes chopped
  • ½ tsp Italian seasoning
  • ½ cup parmesan cheese grated and more for serving
  • Salt and pepper to taste
  • 2 green onions sliced thinly for garnish

Instructions

  • Cook the linguine according to package instructions, drain, and set aside.
  • While the pasta is cooking, melt the butter in a large skillet and brown the sliced chicken breasts along with the Cajun seasoning until fully cooked.
  • Stir in the sun-dried tomatoes, heavy cream, Italian seasoning, Parmesan cheese, salt, and pepper to taste.
  • Simmer until slightly thickened and mix in the cooked fettuccine. Serve with sliced green onions on top and extra parmesan cheese if desired.

Notes

  • Make sure the skillet and the butter are hot before adding the chicken so it can brown properly.
  • If your butter burns regularly, try adding a bit of olive oil to it.
  • Parmesan cheese is a bit salty, so be careful not to add too much extra salt.
