Equipment

  • Knife and cutting board
  • Baking sheet
  • Wax paper
  • Freezer
  • Microwave or stove

Ingredients

  • 3 medium bananas
  • ½ cup smooth peanut butter
  • ½ cup dark chocolate baking chips or chunks
  • 2 tsp avocado oil

Instructions

  • Peel and slice 3 bananas.
  • Place 1 tsp of peanut butter over half of the banana slices.
  • Top with the other half to make peanut butter banana sandwiches.
  • Freeze the sandwiches in a plate or baking sheet covered with wax paper for at least one hour.
  • Just before the freezing time is over, place the chocolate chips and oil in a small bowl and microwave until melted (microwave for 15 seconds and stir, add 5 seconds at a time until melted). Stir until smooth.
  • Dip the sandwiches in the melted chocolate until half of the sandwich is covered.
  • Place the sandwiches in the same baking sheet or plate and freeze until the chocolate is solid, about one more hour. Enjoy!
