Using a colander or flour sifter, sift together the flour, baking powder, salt, and sugar into a medium-sized bowl.
Using a whisk, mix in the vanilla extract, melted butter, eggs, and milk until smooth. Let the batter rest for 5 mins.
Heat a skillet or griddle over medium heat and spray cooking spray on it. Using a ¼ cup measuring cup, drop batter into the skillet. Let it cook until bubbles appear on the surface, flip it and cook it for about a minute on the other side.
Serve while hot.
