Ingredients

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • ¼ tsp salt
  • 1 ½ tbsp sugar
  • 1 tsp vanilla extract
  • 3 tbsp melted butter
  • 1 egg
  • 1 ¼ cups milk
  • Butter-flavored cooking spray

Instructions

  • Using a colander or flour sifter, sift together the flour, baking powder, salt, and sugar into a medium-sized bowl.
  • Using a whisk, mix in the vanilla extract, melted butter, eggs, and milk until smooth. Let the batter rest for 5 mins.
  • Heat a skillet or griddle over medium heat and spray cooking spray on it. Using a ¼ cup measuring cup, drop batter into the skillet. Let it cook until bubbles appear on the surface, flip it and cook it for about a minute on the other side.
  • Serve while hot.

Notes

  1. Sifting the dry ingredients makes for a smoother batter.
  2. Using a whisk ensures all ingredients are well combined
  3. Let the batter rest for 5 mins to activate the baking powder.
