Equipment

  • Large pot
  • Potato masher or fork
  • 2 quart baking dish
  • Oven

Ingredients

  • 2 ½ lb Russet potatoes
  • 1 tsp salt
  • 1 stick unsalted butter (½ cup or 8 tbsp)
  • 1 cup half and half
  • 8 oz crumbled, cooked bacon, or ⅓ cup real bacon bits
  • 2 cups Colby Jack cheese, freshly shredded
  • 3 green onions, sliced

Instructions

  • Preheat the oven to 350 F and spray a 2-quart baking dish with cooking spray.
  • Peel, dice the potatoes and place them in a large pot. Add enough water to cover and 1 tsp of salt. Bring to a boil and cook until the potatoes are soft enough to pierce with a fork. Drain and return the potatoes to the pot.
  • Add the butter and mash them using a potato masher or fork until you reach the desired consistency. Some people like their mashed potatoes smooth and some like some texture.
  • Stir in the half and half and season with pepper and more salt if needed.
  • Spoon the mashed potatoes into the prepared baking dish, top with the shredded cheese and chopped bacon, and bake for 20-25 minutes or until the cheese is melted. Serve with freshly sliced green onions on top.
