Prepare the marinade: in a large bowl, combine the honey, soy sauce, olive oil, minced garlic, paprika, red pepper flakes, and freshly crushed black pepper. Reserve ¼ of the marinade.
Add the veggies and chicken cubes to the bowl, toss well, cover with plastic wrap, and refrigerate for at least 30 minutes.

Once the grill is hot, cook the chicken skewers for 3 minutes on each of the 4 sides until the chicken is fully cooked, basting them with the reserved marinade
