Honey Garlic Chicken Skewers

A mixture of honey, soy sauce, minced garlic, and a touch of heat makes a spectacular marinade for chicken skewers!

Ingredients

  • ½ cup honey
  • ½ cup soy sauce
  • 3 tbsp olive oil
  • 2 garlic cloves minced
  • 1/2 tsp paprika
  • ½ tsp freshly crushed black pepper
  • ½ tsp red pepper flakes
  • 3 boneless, skinless chicken breasts, cut into 1-inch cubes (you can use chicken thighs as well)
  • 1 medium zucchini sliced ¼-inch thick
  • 1 red onion cut into 1-inch cubes
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 orange or red bell pepper cut into 1-inch pieces
  • 6 wooden skewers (soaked in water for 30 mins) or metal skewers

Instructions

  • Prepare the marinade: in a large bowl, combine the honey, soy sauce, olive oil, minced garlic, paprika, red pepper flakes, and freshly crushed black pepper. Reserve ¼ of the marinade.
  • Add the veggies and chicken cubes to the bowl, toss well, cover with plastic wrap, and refrigerate for at least 30 minutes.
  • Prepare the outside grill or griddle if you are using one, by heating it on high heat, and make the skewers by alternating veggies and chicken cubes. For example: chicken, red onion, bell pepper, chicken, zucchini, red onion, chicken red onion, bell pepper and so on..
  • Once the grill is hot, cook the chicken skewers for 3 minutes on each of the 4 sides until the chicken is fully cooked, basting them with the reserved marinade

Notes

  1. Make sure the honey is fully dissolved before placing the chicken and veggies in the bowl.
  2. The grill should be very hot before placing the skewers on it.
  3. Don’t forget to baste the skewers while cooking them.
