Equipment

  • Rubber spatula or wooden spoon
  • Skillet or griddle

Ingredients

  • 7 tbsp all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • Pinch of salt
  • 1 cup sour cream
  • 2 tbsp milk
  • 2 large eggs
  • Butter or cooking spray for frying

Instructions

  • Combine the flour, sugar, baking soda, and salt in a small bowl.
  • In a medium bowl, combine the sour cream and milk. Stir in the dry ingredients until just barely combined. Do not overmix.
  • Whisk in the beaten eggs and vanilla extract until just combined. Do not overmix.
  • Heat a non-stick skillet or griddle over medium-low heat and spray with cooking spray or add butter. Pour in about ¼ cup batter and cook until bubbles form on the surface, about 2 minutes. Flip and cook on the other side until fully cooked, about 1-2 minutes. Serve immediately.
