Quick And Easy Baked Sweet Potato Fries

Ingredients

  • 3 medium sweet potatoes, peeled and cut into matchsticks
  • Ice-cold water
  • 2 tbsp cornstarch
  • ½ tsp salt
  • ½ tsp freshly ground pepper
  • ¼ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp celery salt
  • ¼ tsp mustard powder
  • ½ tsp dried parsley
  • 2 tbsp avocado oil (or canola, or light olive oil)

Instructions

  • Cut the sweet potatoes into slices and then matchsticks (try to make them as even as possible). Place them in a bowl of iced water for 30 minutes.
  • Preheat the oven to 415 F and line two baking sheets with parchment paper.
  • Drain the sweet potato matchsticks and pat them dry.
  • Place them in a plastic zipper bag or bowl and add the cornstarch. Shake to cover, and place them on the baking sheet.
  • Mix the herbs, spices, salt, and pepper in a small bowl.
  • Drizzle the oil over the sweet potato matchsticks and sprinkle the spice mix over them. Transfer half to the other baking sheet. Toss and bake for 15 mins.
  • Flip and bake for another 10-15 minutes or until crispy. Serve immediately.
