Ingredients

  • 12 oz spaghetti or angel hair pasta
  • 2 cups cooked chicken, cubed
  • 2- 10 oz cans cream of chicken soup
  • 1 cup salsa
  • ¾ cup Mexican crema or sour cream
  • ¼ cup chicken broth
  • 2 cups shredded Mexican cheese blend divided
  • 1 ½ tbsp taco seasoning
  • 1 tbsp fresh parsley plus more for serving
  • Freshly ground pepper

Instructions

  • Cook the pasta according to package directions, drain, and set aside
  • While the pasta is cooking, preheat the oven to 350 F.
  • After you drain the pasta, pour the cream of chicken soups, salsa, crema (or sour cream), chicken broth, taco seasoning, and one cup of cheese into the same pot. Stir until well combined.
  • Mix in the cooked chicken and pasta
  • Place the pasta mixture into a 9x13-inch casserole dish, top with the remaining cup of shredded cheese and bake for 25 minutes. Serve with freshly chopped parsley on top.

Notes

  1. Make sure to cook the pasta al dente. Do not overcook it because you have to bake it.
  2. Make sure to stir all sauce ingredients well before mixing in the pasta and chicken.
  3. Serve piping hot. Pasta dishes tend to harden as they cool down.
