Ingredients

  • 1 ¼ cups all-purpose flour
  • Pinch of salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp ground cinnamon
  • tsp ground nutmeg
  • 1 overripe large banana
  • 1 egg
  • cup sugar
  • ¼ cup milk
  • ½ tsp vanilla extract
  • ¼ cup butter, melted
  • Cooking spray

Instructions

  • Combine the flour, salt, baking powder, baking soda, cinnamon, and nutmeg in a medium-sized bowl. Set aside.
  • Mix the mashed banana, egg, sugar, and vanilla extract in a small bowl until well combined.
  • Whisk the wet ingredients into the dry until just combined. Do not overmix. Let the batter rest for 5-10 minutes.
  • Heat a skillet or griddle over medium-low heat and spray with cooking spray. Pour 1⁄3 cup batter into the skillet and cook until bubbles appear on the top and the sides are slightly dry and golden, about 2-3 minutes. Carefully flip the pancake with a spatula and cook on the other side until golden brown, about 1-2 minutes. Serve hot.
