Equipment

  • Large mixing bowl
  • Wooden spoon or rubber spatula
  • 9x13-inch baking dish
  • Oven
  • Hand held or stand mixer

Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1-20 oz can crushed pineapple with juice (unsweetened)
  • cup sweetened shredded coconut

For the frosting:

  • 1 stick unsalted butter
  • 8 oz cream cheese
  • 1 tsp vanilla
  • 1 ¾ cups confectioner’s sugar
  • 1/4 cup chopped walnuts (optional for serving)

Instructions

  • Preheat the oven to 350 F. Grease and flour a 9x13-inch baking dish.
  • Put all cake ingredients in a large bowl and stir until there are no lumps.
  • Pour the batter into the prepared baking dish.
  • Bake for 35-40 minutes, or until a toothpick inserted in the middle comes out clean. Let the cake cool down completely (about 1 hour)
  • Make the frosting: using a hand-held or stand mixer, beat the butter and cream cheese together until combined. Add the vanilla extract and confectioner’s sugar and beat until smooth.
  • Spread the frosting over the cool cake and sprinkle the chopped walnuts on top.
