Equipment

Ingredients

For the caviar:

  • 4 Roma tomatoes, diced and seeded
  • 2 avocados, diced
  • cup red onion, chopped
  • 1-15 oz can black beans, drained and rinsed
  • 1-15 oz can black eyed peas, drained and rinsed
  • 1 red bell pepper, diced
  • cup fresh cilantro, chopped

For the dressing:

  • cup extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 3 tbsp red wine vinegar
  • 1 tbsp honey
  • ½ tsp Dijon mustard
  • 1 tsp red pepper flakes
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  • Make the dressing: whisk all dressing ingredients together in a small bowl or measuring cup until well combined.
  • Place all veggies in a large bowl and drizzle dressing over them.
  • Toss to combine and serve with chips as a dip, or as a side salad.
