Ingredients

  • 2 large carrots, chopped
  • ½ white onion, chopped
  • 1 ½ cups green beans, cut into ½ inch pieces
  • 3 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 1 medium head cabbage, chopped
  • 1- 16 oz can whole tomatoes, with juice
  • 1 quart V8 juice
  • 1-14 oz can low sodium beef broth
  • 1-1 oz packet dry onion soup mix
  • 2 bay leaves
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  • Place all the chopped veggies in a large soup pot.
  • Pour in the beef broth, V8 juice, whole tomatoes, dry onion soup mix, and herbs.
  • Add enough water to cover the veggies and bring to a boil.
  • Reduce the heat and simmer the soup for about 25-30 mins.
  • Check the seasoning and add salt if needed.

Notes

  1. Chop the veggies roughly the same size to get a uniform bite in every spoonful.
  2. Cooking time will depend on how well done you like your veggies. If you want them with a little crunch still on them, cook them for less time.
  3. Check the seasoning at the end. Try not to add too much salt at the beginning because as it cooks, water evaporates and the amount of salt can increase.
  4. Eat as much soup as you like! You can eat the whole pot in one day.
