There are few recipes I love more than one-pot meals. They are easy, convenient, and I don’t have a mountain of dishes to wash. This tomato-based Albondigas Soup Recipe is one of my favorite one-pot dinners. It has protein, veggies, and carbs in the form of potatoes. It is a balanced meal that warms the soul!
What’s In Albondigas Soup?
To make this soul-warming soup, you will need:
- Beef broth
- Carrots
- Potatoes
- Salsa
- Ground beef
- Breadcrumbs
- Milk
- Herbs: dried cumin, coriander, onion flakes, and parsley
- Lemon wedges, sliced avocado, and fresh cilantro for serving
Is Albondigas Soup Easy To Make?
It is! The “hardest” part is making the meatballs, which is not hard at all!
- Place the beef broth, carrots, potatoes, and salsa in a large Dutch oven or pot. Bring to a boil, reduce the heat, and simmer for 15 mins.
- Make the meatballs: combine the ground beef, breadcrumbs, milk, dried herbs, salt, and pepper in a medium-sized bowl using your hands. Form one-inch balls.
- Bring the broth to a boil and drop the meatballs into the pot carefully. Once all the meatballs are in, simmer for 10 minutes or until they are cooked through. Check the seasoning and add salt and pepper if needed.
How Many Calories Does Albondigas Soup Have?
As you can see by reading the recipe, the only fat in this soup is in the meat itself. There is no extra fat added, so use lean ground beef if you want to keep it low fat. If you follow this recipe, each serving (4 in total), has 370 cal, 31g of protein, 31g of carbs, and 11g of fat. It is a very balanced meal.

Albondigas Soup (Mexican Meatball Soup) Recipe
Ingredients
- 1 quart low-sodium beef broth
- 2 large carrots, peeled and sliced
- 2 medium-sized potatoes, peeled and dice
- 1-16 oz jar salsa (your choice of milk, medium, or hot)
- 1 lb lean ground beef
- ¼ cup breadcrumbs
- ¼ cup milk
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 ½ tsp dried parsley
- 1 ½ tsp dried onion flakes
- Salt and pepper to taste
- Lemon wedges, sliced avocado, and fresh cilantro for serving
