Ingredients

Sauce:

  • 2 tbsp soy sauce (I used low-sodium)
  • 3 tbsp hoisin sauce
  • 2 tbsp rice wine vinegar
  • 2 tsp sriracha (or to taste)
  • 1 tsp sesame seed oil

Filling:

  • 1 tbsp extra-virgin olive oil
  • 1 cup onion chopped
  • 2 garlic cloves minced
  • 1 tbsp ginger freshly grated
  • 1 lb ground chicken
  • ½ cup water chestnuts drained and chopped
  • 2 green onions sliced
  • Salt and pepper to taste
  • 1 Butter, Bibb, or Boston lettuce, leaves separated, washed, and dried

Instructions

  • Make the sauce: in a small bowl combine the hoisin sauce, soy sauce, rice wine vinegar, sriracha, and sesame seed oil.
  • In a large skillet, heat the olive oil over medium-high heat and saute the onions, garlic, and freshly grated ginger until fragrant, about 1 minute.
  • Mix in the ground chicken and cook until no pink is left.
  • Finally, pour in the sauce and simmer for 1-2 minutes.
  • Turn off the heat and stir in the water chestnuts and green onions. Season with salt and pepper. Serve over lettuce leaves.

Notes

  • Add less or more sriracha depending on how much you like spicy food.
  • I like to crumble the ground chicken as much as I can while cooking it so I don’t have large clumps of meat.
  • Try to use low-sodium soy sauce for a healthier meal.
