What Makes Yogurt Pancakes So Fluffy?

Yogurt is acidic and the acid in yogurt reacts with baking powder and baking soda. This chemical reaction produces gas. These air bubbles make the pancakes light, soft, and fluffy. When making these pancakes, do not overmix the batter or you will deflate these bubbles.

Yogurt can be a bit thick to make pancake batter, so you need to add water to make the batter thin enough to spoon into the skillet or griddle.

The amount of water will depend on how thick the yogurt you are using is. Remember not to overmix the batter. A few lumps are good.

Ingredients

  • 2 cups vanilla-flavored Greek yogurt
  • 2 eggs beaten and room temperature
  • ½ - ¾ cup water
  • 2 cups all-purpose flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • Pinch of salt

Instructions

  • Whisk together the yogurt, eggs, and ½ cup water in a bowl .
  • In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  • Pour the yogurt mixture into the flour mixture and stir until combined but do not overmix. A few lumps are ok. If you feel the mixture is too thick, add a bit more water.
  • Heat a heavy-bottomed skillet or griddle over medium heat and spray with butter-flavored cooking spray. Use a ¼ measuring cup to spoon batter into the hot skillet and cook on medium-low heat until bubbles start to form on the top.
  • Using a rubber spatula, flip the pancake and cook for about 1 minute on the other side or until golden brown.
