What Do I Need to Make Fluffy Yogurt Pancakes?

  • All-purpose flour
  • Baking powder and baking soda
  • Large eggs
  • Vanilla-flavored yogurt
  • Water
  • Pinch of salt

What Makes Yogurt Pancakes So Fluffy?

Yogurt is acidic and the acid in yogurt reacts with baking powder and baking soda. This chemical reaction produces gas. These air bubbles make the pancakes light, soft, and fluffy. When making these pancakes, do not overmix the batter or you will deflate these bubbles.

Can I Use Flavored Yogurt to Make Pancakes?

That is the beauty of these pancakes! I used vanilla-flavored yogurt, but you can use any flavored yogurt and surprise your family with new pancakes every time! One of my family’s favorites is lemon-flavored yogurt pancakes.

What Texture Should Yogurt Pancake Batter Have?

Yogurt can be a bit thick to make pancake batter, so you need to add water to make the batter thin enough to spoon into the skillet or griddle.

The amount of water will depend on how thick the yogurt you are using is. Remember not to overmix the batter. A few lumps are good.
