  3. Heat a large cast iron skillet over medium-high heat and add the olive oil and 1 tbsp butter. Once the oil is hot and the butter melts, add the chicken pieces in one layer.
  4. Let them cook without moving them, for about 3 minutes. Flip them over, and cook for 2 minutes more.

Add the remaining butter, minced garlic, and parsley. Cook for one more minute until the chicken is fully cooked and serve immediately.

I rarely review recipes, but this is great! Actually just as easy as it says and wonderful flavor. We plan to have it again with broccoli and some soy sauce over rice.
