What’s In An Oreo Cheesecake Bar?
To make this one-of-a-kind bars, you will need:
- Refrigerated chocolate chip cookie dough
- Oreos
- Cream cheese
- Sugar
- Eggs
- Vanilla extract
- Salt
- Caramel sauce to drizzle on top
How Can I Make An Oreo Cheesecake Bar With a Chocolate Chip Cookie Base?
- Line a 9×13-inch baking dish with parchment paper and press the chocolate chip cookie dough evenly into the bottom, using your hand. Preheat the oven to 325 F.
- Add a layer of oreo cookies on top of the cookie dough. You might need to cut some in half to get all the way to the edges of the baking dish.
- Using a hand held or stand mixer, beat the softened cream cheese until smooth. Add the sugar, vanilla extract, and salt and mix until smooth again.
- Add the eggs, one by one, beating until they are well incorporated into the mixture. Pour this mixture over the oreo cookies. Use a spatula to smooth the top.
- Sprinkle crumbled oreos over the top and bake for 30 to 35 mins or until the center is just slightly jiggly.
- Turn off the oven and leave it inside for 10 mins. Remove it from the oven and let it cool down completely (at least 3 hrs). Drizzle caramel sauce over them, cut and serve.
How Do I Know My Cheesecake Is Done?
Your cheesecake will be done when most of it is set, but a small circle in the middle might be slightly jiggly. When you touch the surface of the cake, no residue has to stick to your fingers. Remember it should wobble a bit in the center, but just a little bit.

Notes
- Take the cream cheese out of the fridge a couple of hours before so it is soft and room temperature.
- Remember the cheesecake should jiggle just a little bit in the center, do not overcook it.
- Let it cool completely before talking it out of the dish and cutting the bars.
- Use parchment paper for easier handling and removal from the dish.
