Line a 9x13-inch baking dish with parchment paper and press the chocolate chip cookie dough evenly into the bottom, using your hand. Preheat the oven to 325 F.
Add a layer of oreo cookies on top of the cookie dough. You might need to cut some in half to get all the way to the edges of the baking dish.
Using a hand held or stand mixer, beat the softened cream cheese until smooth. Add the sugar, vanilla extract, and salt and mix until smooth again.
Add the eggs, one by one, beating until they are well incorporated into the mixture. Pour this mixture over the oreo cookies. Use a spatula to smooth the top.
Sprinkle crumbled oreos over the top and bake for 30 to 35 mins or until the center is just slightly jiggly.
Turn off the oven and leave it inside for 10 mins. Remove it from the oven and let it cool down completely (at least 3 hrs). Drizzle caramel sauce over them, cut and serve.
