These flavored-packed Santa Fe Chicken Packets are impressive-looking, but very easy to make. Perfectly seasoned chicken breasts are topped with hearty beans and colorful veggies bathed in zesty salsa, wrapped in foil, and grilled to tender perfection! Ingredients I Need To Make Santa Fe Chicken Foil Packets:
You will need:
- Boneless, skinless chicken breasts
- Cumin, coriander, and chili powder
- Salt and pepper
- Black beans
- whole-kernel corn
- Green bell pepper
- Chunky salsa
- Shredded cheddar cheese
- Chopped cilantro, sliced jalapenos, and grape tomatoes for garnish
Making Santa Fe Chicken Foil Packets:
- Preheat the grill or oven to 425 F. Season the chicken breasts on both sides with ground cumin, coriander, chili powder, salt, and pepper to taste.
- Cut 4 large pieces of foil into squares and spray them with cooking spray.
- Place one chicken breast in the middle of each square and divide the veggies and salsa evenly over each of the chicken breasts.
- Bring two sides of the foil together and fold them 3-4 times and then tuck the ends under the chicken breasts to create a packet.
- Once the grill or oven are hot, place the packets, veggies side down, and cook for 15 mins. Flip them over and cook for an additional 15 minutes.
- Carefully remove the packets from the grill, open them, divide the shredded cheddar between the 4 packets and place them on the grill to melt the cheese (packets open).
- Serve with chopped fresh cilantro, sliced jalapenos, and sliced grape tomatoes on top.

- Tex-Mex twist: add barbecue sauce instead of salsa, and add crispy bacon and hash browns on top.

Notes
- Make sure the foil doesn’t rip or the liquid will drain out of the packets
- Do not forget to season the chicken breasts with salt and pepper, as well as adding the spices
- For extra spice, add a couple of dashes of hot sauce to each packet
