What Goes Into Stuffed Pepper Soup?

You will need the following ingredients:

  • Olive oil
  • Onion and garlic
  • Ground beef
  • Ground pork
  • Beef broth
  • Tomato sauce
  • Diced tomatoes
  • Green, yellow, and red bell peppers
  • Basmati rice
  • Dried oregano and basil

Stuffed Pepper Soup Recipe

Making Stuffed Pepper Soup:

  1. Heat a large pot over medium heat, add the olive oil, and saute the onions until translucent, about 5 mins. Add the garlic, ground beef, and ground pork. Cook, crumbling the ground meats, until fully cooked. Drain the excess fat.
  2. Add the diced bell peppers, dried oregano, and basil, and pour in the beef broth, tomato sauce, and diced tomatoes. Stir, bring to a boil, reduce the heat, and simmer for 20-25 mins, covered.
  3. Mix in cooked rice and season with salt and pepper to taste.

Ingredients

  • 1 tbsp olive oil
  • 2 cups onion, sliced
  • 3 garlic cloves, minced
  • 1 lb lean ground beef
  • ½ lb ground pork
  • 4 cups beef broth
  • ½ cup tomato sauce
  • 1-28 oz can diced tomatoes
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • ½ tsp dried basil
  • ½ tsp dried oregano
