Ingredients

  • 1 tbsp olive oil
  • 2 cups onion, sliced
  • 3 garlic cloves, minced
  • 1 lb lean ground beef
  • ½ lb ground pork
  • 4 cups beef broth
  • ½ cup tomato sauce
  • 1-28 oz can diced tomatoes
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 1 cup Basmati rice, cooked
  • Salt and pepper to taste

Instructions

  • Heat a large pot over medium heat, add the olive oil and saute the onions until translucent, about 5 mins. Add the garlic, ground beef, and ground pork. Cook, crumbling the ground meats, until fully cooked. Drain the excess fat.
  • Add the diced bell peppers, dried oregano and basil, and pour in the beef broth, tomato sauce, and diced tomatoes. Stir, bring to a boil, reduce the heat, and simmer for 20-25 mins, covered.
  • Mix in cooked rice and season with salt and pepper to taste.
