Place all ingredients except for the breadcrumbs and oil into a large mixing bowl. Mix with a fork or spatula until well combined.
Divide the mixture into 14 patties. Try to make them roughly the same diameter and thickness (approximately 3 inches in diameter and 1/2-inch thick)
Place the breadcrumbs in a shallow dish and gently press the patties into the crumbs ensuring they are coated evenly on all sides.
Heat a large skillet over medium high heat and add 1.5 tbsp oil. Once the oil is hot, brown 7 patties on both sides until golden brown.
Repeat with the remaining 7 patties until all patties are golden brown and crispy. Serve hot with a side of roasted potatoes or rice, and salad. They can also be used as patties for burgers or sliders!
Notes
For extra juicy patties, refrigerate the formed patties for at least 30 minutes before cooking. This helps them hold their shape while during frying and ensures they stay moist and flavorful
