Pat dry the shrimp and place them in a bowl with the olive oil, minced garlic, white wine, salt, and pepper. Toss to combine.
Preheat the oven to 425 F and place the seasoned shrimp in a 9x13-inch baking dish, in a single layer.
Melt the butter and mix it with the panko breadcrumbs and lime zest.
Sprinkle this mixture evenly over the shrimp.
Bake for 7 minutes or just until the shrimp turn pink and start to curl up.
Turn the broiler on high, and cook for 3 more minutes until the breadcrumbs turn golden brown and crispy. Serve with lemon juice on the side and freshly chopped parsley on top.
