Ingredients

  • 1 ½ lb large tail-on shrimp peeled and deveined
  • 4 garlic cloves minced
  • ¼ cup white wine
  • ¼ cup melted butter
  • ¼ cup panko breadcrumbs
  • 1 tsp lime zest
  • 2 tbsp lime juice
  • 1 ½ tbsp freshly chopped parsley
  • 2 tsp olive oil

salt and pepper to taste

    Instructions

    • Pat dry the shrimp and place them in a bowl with the olive oil, minced garlic, white wine, salt, and pepper. Toss to combine.
    • Preheat the oven to 425 F and place the seasoned shrimp in a 9x13-inch baking dish, in a single layer.
    • Melt the butter and mix it with the panko breadcrumbs and lime zest.
    • Sprinkle this mixture evenly over the shrimp.
    • Bake for 7 minutes or just until the shrimp turn pink and start to curl up.
    • Turn the broiler on high, and cook for 3 more minutes until the breadcrumbs turn golden brown and crispy. Serve with lemon juice on the side and freshly chopped parsley on top.

    Notes

    • Patting the shrimp dry is very important to achieve a crispy result. Wet shrimp moisten the breadcrumbs too much.
    • If you can, let the shrimp marinate in the garlic/oil/white wine mixture for 30 mins.
    • Do not overcook the shrimp!
