Beef Enchilada Casserole

Ingredients

  • ½ cup onion, chopped
  • 1 lb lean ground beef
  • ¼ cup yellow bell pepper, chopped
  • 2 oz garlic cloves, minced
  • 1-16 oz bottle chunky salsa
  • 1-16 oz can refried beans
  • 1- 10 oz can enchilada sauce
  • ½ tsp coriander
  • ½ tsp cumin
  • ½ cup sliced black olives
  • 1 tsp jalapenos, chopped
  • Salt and pepper to taste
  • 10- 6 inch corn tortillas, sliced in half and divided
  • 2 cups cheddar cheese, shredded and divided
  • Sliced green onions for garnish

Instructions

  • Cook the ground beef with the onions, bell peppers, and garlic in a large skillet over medium-high heat. Preheat the oven to 350 F.
  • Mix in the salsa, beans, enchilada sauce, cumin, coriander, black olives, and jalapenos. Cook until almost all liquid has evaporated. Season with salt and pepper.
  • Grease a 9x13-inch baking dish.
  • Layer the dish like this:
    - Half of the tortillas covering the bottom of the dish
    - Spoon half of the meat sauce over the tortillas
    - Sprinkle 1 cup of shredded cheese over the meat sauce
    - Repeat the layers.
  • Cover with foil and bake for 20 minutes. Remove the foil and bake for 5-7 more minutes until the cheese is melted, bubbly, and slightly golden.

Notes

  1. If you can’t find lean ground beef, drain the fat rendered after cooking it.
  2. Simmer the meat sauce until almost all liquid has evaporated so your casserole doesn’t turn out soggy.
  3. Let the casserole rest for about 10 minutes before cutting.
