  • Enchilada sauce

  • 6-inch corn tortillas
  • Shredded cheddar cheese
  • Green onions

How Do I Make Beef Enchilada Casserole?

Make this layered dish by following these instructions:

  1. Cook the ground beef with the onions, bell peppers, and garlic in a large skillet over medium-high heat. Preheat the oven to 350 F.
  2. Mix in the salsa, beans, enchilada sauce, cumin, coriander, black olives, and jalapenos. Cook until almost all liquid has evaporated.
  3. Season with salt and pepper.
  4. Grease a 9×13-inch baking dish.
    • Layer the dish like this:
    • Half of the tortillas covering the bottom of the dish
    • Spoon half of the meat sauce over the tortillas
    • Sprinkle 1 cup of shredded cheese over the meat sauce
      Repeat the layers.
  5. Cover with foil and bake for 20 minutes. Remove the foil and bake for 5-7 more minutes until the cheese is melted, bubbly, and slightly golden.

  • 1- 10 oz can enchilada sauce

  • Salt and pepper to taste
  • 10- 6 inch corn tortillas, sliced in half and divided
  • 2 cups cheddar cheese, shredded and divided
