Ingredients

  • 2 lb lean ground beef
  • 1 cup onion diced
  • 3 garlic cloves minced
  • 1 jalapeno chopped
  • 1- 8 oz can tomato sauce
  • 1- 14.5 oz diced tomatoes (with juice)
  • 1 tbsp tomato paste
  • 1 ½ tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp dried oregano
  • ½ cayenne pepper
  • tsp ground cinnamon
  • Salt and pepper to taste
  • 2 ½ tbsp masa harina
  • ¼ cup water
  • 1- 15 oz can kidney beans drained and rinsed
  • 1- 15 oz can pinto beans drained and rinsed
  • Your favorite toppings like shredded cheese, sliced green onions, and sour cream

Instructions

  • Brown the ground beef with the diced onions and minced garlic in a large pot over medium-high heat.
  • Add the spices, and cook until fragrant. Pour in the tomato sauce, tomato paste, diced tomatoes (with juice), and chopped jalapenos. Season with salt and pepper to taste.
  • Bring to a boil, reduce the heat and simmer for 30 minutes.
  • To thicken, dissolve the masa harina in ¼ cup of water and slowly add it to the simmering chili. Cook until thickened.
  • Lastly, add the kidney and pinto beans, and cook for 5 more minutes.
  • Serve hot with your favorite toppings!

Notes

  1. If you don’t have lean ground beef, you might want to drain the excess fat rendered after cooking it.
  2. For a thicker chili, mix in more masa harina.
  3. Add the salt and pepper after simmering the chili for 30 minutes or it may become too salty as water evaporates.
