Ingredients

  • 20 oz frozen spinach (steam-in-bag)
  • 1 tbsp butter
  • ¼ cup chopped onion
  • 2 garlic cloves, minced
  • ¼ cup white wine
  • ½ cup 2% milk
  • ½ cup heavy cream
  • 6 oz cream cheese, room temperature
  • tsp ground nutmeg
  • ½ tsp red pepper flakes (or to taste)
  • ½ tsp Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  • Place the frozen spinach in the microwave and cook it according to package instructions. Place it in a colander and squeeze out the most liquid you can. Set aside.
  • Make the creamy part: in a medium-sized skillet or saucepan, melt the butter and saute the onions and garlic until fragrant, about 2 minutes.
  • Pour in the white wine and simmer until reduced by half.
  • Add the milk, heavy cream, cream cheese, nutmeg, red pepper flakes, salt, and pepper to taste. Simmer until everything is well incorporated and smooth.
  • Add the spinach and parmesan cheese and cook until hot.

Notes

  1. Squeeze as much water out of the cooked spinach as possible, otherwise your creamed spinach will be runny instead of creamy.
  2. If possible, grate your own parmesan cheese. Pre-grated cheese has other added ingredients.
  3. Add more or no red pepper flakes according to your taste.
