Ingredients

  • 1 cup shredded coconut
  • ¾ cup granulated sugar
  • ½ cup original Bisquick mix
  • ¼ cup butter, softened
  • 2 cups milk
  • 1 ½ tsp pure vanilla extract
  • 4 eggs, room temperature

Instructions

  • Grease a 9-inch pie dish with butter or cooking spray and preheat the oven to 350 F.
  • Using a whisk or handheld mixer, mix all ingredients in a large bowl until fully combined.
  • Pour the mixture into the pie dish and bake for 50-55 mis or until a toothpick inserted into the center comes out clean and the top begins to brown.
  • Let it cool down completely before serving.

Notes

  1. Before you start cooking, make sure the butter and eggs are room temperature. 
  2. If you feel the pie is not done but the top is browning too quickly, cover it with foil.
  3. Let the pie cool down completely before serving.
