Ingredients

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1 iceberg lettuce head, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • ½ cup black olives, sliced
  • 1 can red kidney beans, rinsed and drained
  • 1 cup tomatoes, seeded and diced
  • ¼ cup red onion, finely chopped
  • 1 cup cheddar cheese, shredded
  • 10 oz Nacho Cheese-flavored Doritos
  • 1-16 oz bottle Catalina salad dressing

Instructions

  • Cook the ground beef in a large skillet over medium-high heat. Add the taco seasoning plus ½ cup of water and cook until slightly thick.
  • Place the ground beef, chopped veggies, and shredded cheese in a large salad bowl. Toss until all ingredients are well combined.
  • Gently mix in the slightly crushed Doritos.
  • Pour in the Catalina salad dressing and gently toss everything together until all ingredients are well coated with the dressing. Serve immediately.

Notes

  1. When cooking the ground beef, make sure you simmer it until the sauce is thick, otherwise, the juice from the meat will mix with the salad dressing.
  2. Try to cut your veggies roughly the same size. This makes the salad more appealing and you can get all veggies in one forkful.
  3. After you add the Doritos and dressing, serve the salad immediately because the Doritos can get soggy quite quickly.
