- 2 large sweet potatoes
- 1 egg, beaten
- 1 cup Parmesan cheese, freshly grated
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp garlic powder
- Freshly ground pepper to taste
Preheat the oven to 400 F and line a baking sheet with foil. Spray the foil with non-stick spray.
Wash, peel, and cut the sweet potatoes in wedges.
Beat the eggs in a shallow dish.
Place the Parmesan cheese in a second shallow dish and mix in the garlic powder, dried oregano, dried parsley, paprika, and pepper.
Dip the wedges in the egg and then coat in the Parmesan mixture on all sides. Place them in the prepared baking dish and bake for 15-20 minutes or until crispy on the outside and tender on the inside.
