Ingredients

  • 2 large sweet potatoes
  • 1 egg, beaten
  • 1 cup Parmesan cheese, freshly grated
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Freshly ground pepper to taste

Instructions

  • Preheat the oven to 400 F and line a baking sheet with foil. Spray the foil with non-stick spray.
  • Wash, peel, and cut the sweet potatoes in wedges.
  • Beat the eggs in a shallow dish.
  • Place the Parmesan cheese in a second shallow dish and mix in the garlic powder, dried oregano, dried parsley, paprika, and pepper.
  • Dip the wedges in the egg and then coat in the Parmesan mixture on all sides. Place them in the prepared baking dish and bake for 15-20 minutes or until crispy on the outside and tender on the inside.
