Ingredients

  • 2 lb chicken thigh filets
  • 6 pita or flatbreads
  • 6 lettuce leaves

For the marinade:

  • 3 garlic cloves minced
  • 1 tbsp white wine vinegar
  • 3 tbsp lemon juice
  • 1 tbsp olive oil
  • 3 tbsp natural flavored Greek yogurt
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp dried oregano
  • ½ tsp paprika
  • Salt and pepper to taste

For the tzatziki

  • 1 English cucumber grated and liquid squeezed out
  • 1 ¼ cup natural-flavored Greek yogurt
  • 1 ½ tbsp lemon juice
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • Salt and pepper to taste

For the salad:

  • 1 cup grape tomatoes sliced
  • 1 cup English cucumber diced
  • ¼ cup red onion thinly sliced
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh mint chopped
  • Salt and pepper to taste

Instructions

  • Marinate the chicken: mix all ingredients for the marinade in a large bowl and stir in the chicken thigh filets. Cover with plastic wrap and refrigerate for 2 hours or overnight.
  • Grate the cucumber and place it in a colander to remove the excess water. Press it down to dry it as much as you can.
  • Prepare the tzatziki by combining the grated cucumber with the rest of the ingredients.
  • For extra topping, make a salad by combining sliced grape tomatoes, chopped cucumber, sliced red onion, chopped fresh parsley, and mint. Season with salt and pepper.
  • Grill the chicken: remove any excess marinade from the chicken thighs and grill them in a preheated outdoors grill or a hot grill pan.
  • Assembling the gyros: warm the pita bread in the microwave, place a lettuce leaf and a sliced grilled chicken thigh in the middle of the warm pita, top with tzatziki, salad, and fold.

Notes

  1. Before grilling the chicken, remove the excess marinade.
  2. Remember to warm the pita bread before wrapping the gyros or they could tear.
  3. Squeeze as much water from the grated cucumber as you can so the tzatziki is not watered down.
