Combine the pineapple juice, Tabasco, and BBQ dry rub in a large bowl and mix until the dry rub is completely dissolved. Reserve 1/2 of the marinade in a small bowl for basting, and set aside. Preheat the grill or the oven to 425 F.
Into the bowl place the chicken cubes and let stand for 5 minutes.
Make the skewers by alternating the chicken cubes with the veggies until all are used. For example: chicken, red onion, green bell pepper, mushroom, pineapple, red onion, orange bell pepper, and so on and so forth.
Place the skewers on a hot grill or oven and cook for 5 minutes on each of the four sides or until the chicken is fully cooked, basting them on each side with the reserved marinade.
