What Ingredients Do I Need To Make Honey Garlic Marinade For Chicken Skewers?

To make this sweet and sour marinade, you need:

  • Pineapple juice
  • Tabasco
  • KC Masterpiece BBQ sauce mix and dry rub

What Veggies Can I Use For Honey Garlic Chicken Skewers?

In this recipe we will use:

  • Red onion
  • mushrooms
  • Bell pepper squares (green, red, and orange)
  • pineapple chunks

You can also use:

  • Grape or cherry tomatoes
  • Broccoli florets
  • Cauliflower florets
  • Pineapple chunks

Making Honey Garlic Chicken Skewers:

  1. Combine the pineapple juice, hot sauce, and BBQ dry rub in a bowl and mix until the dry rub is completely dissolved. Reserve 1/2 of the marinade for basting in a second bowl and set aside. Mix the chicken cubes into the large bowl and let stand for 5 minutes. Preheat the grill or the oven to 425 F.
  2. Assemble the skewers in this order (do not overpack the skewers):    Half of one mushroom, three pieces of red onion, one piece of bell pepper, one pineapple piece, and one chicken cube. 
  3. Season the skewers with salt and pepper and grill for 5-8 minutes o each side, or until the chicken is cooked through, basting with the reserved marinade.

Ingredients

  • 1 cup pineapple juice
  • 2 tsp Tabasco hot sauce
  • 1 packet KC Masterpiece BBQ sauce mix and dry rub
  • 2 boneless, skinless chicken breasts cut into 1-inch cubes
  • 6 mushrooms, cut in half sliced into ¼-inch slices
  • 1/2 red onion, cut into 1-inch pieces cut into 1-inch squares
  • 1/2 green bell pepper, cut into 1-inch pieces cut into 1-inch squares
  • 1/2 orange bell pepper, cut into 1-inch pieces cut into 1-inch squares
  • 1/2 red bell pepper, cut into 1-inch pieces
  • 12 1-inch pieces of pineapple
  • 1 tsp salt
  • freshly cracked black pepper to taste
  • 6 metal or wood skewers

Instructions

  • Combine the pineapple juice, Tabasco, and BBQ dry rub in a large bowl and mix until the dry rub is completely dissolved. Reserve 1/2 of the marinade in a small bowl for basting, and set aside. Preheat the grill or the oven to 425 F.
  • Into the bowl place the chicken cubes and let stand for 5 minutes.
  • Make the skewers by alternating the chicken cubes with the veggies until all are used. For example: chicken, red onion, green bell pepper, mushroom, pineapple, red onion, orange bell pepper, and so on and so forth.
  • Place the skewers on a hot grill or oven and cook for 5 minutes on each of the four sides or until the chicken is fully cooked, basting them on each side with the reserved marinade.

Notes

  • If using wooden skewers, soak them in water for at least 30 mins before using, so they don’t burn while grilling
  • Save some of the marinade for basting the skewers while grilling for an added touch of flavor
  • More marinating time = more flavor!
