Prepare the filling. In a bowl, mix together softened butter, granulated sugar, light brown sugar, and cinnamon.
Cut the crust off each slice of bread. Then, flatten each slice using a rolling pin. Spread the filling in a thin layer. Roll tightly. Repeat with the remaining slices of bread and filling.
In a shallow bowl, whisk together the eggs, milk, and vanilla extract. Dip each bread roll in the egg mixture. Make sure all sides are coated.
In a non-stick pan, melt the butter over medium heat. Place the roll ups seam-side-down in a pan. Cook for 1-2 minutes per side or until golden brown on all sides.
While the roll ups are cooking, prepare the cinnamon sugar coating. In a bowl, mix together sugar and cinnamon.
Remove the roll ups from the pan and roll in the cinnamon sugar.
Prepare the cream cheese glaze/dipping sauce. Whisk together the softened cream cheese, butter, powdered sugar, milk and vanilla extract until creamy and no lumps remain. Drizzle the glaze over the cinnamon roll-ups or use this cream cheese glaze as a dip. Enjoy!
