Equipment

  • Wooden spoon

  • Heavy skillet or griddle

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp salt
  • 2 tbsp olive oil
  • 1 tsp honey
  • ¾ cup cold water
  • Vegetable oil or cooking spray for cooking

Instructions

  • Place the flour, baking powder, and salt in a large bowl. Using a whisk mix until well combined.
  • With your hand, make a well in the middle, and add the olive oil, honey, and water.
  • Using a wooden spoon or rubber spatula, mix all ingredients until a dough forms.
  • Transfer the dough to a floured surface and knead 5-10 minutes until smooth. The dough should be a bit tacky but not sticky. If too dry, add a bit more water, and if it is too sticky, add a bit more flour.
  • Cover the dough with a clean dish cloth and let it rest for 10 mins
  • Cut the dough into 6 equal pieces and using a rolling pin, roll each piece into a ¼-inch thick disk.
  • Heat a skillet or griddle over medium heat, brush it with oil, and place a flatbread (or more if they fit) in the skillet. Cook until golden brown on the bottom, flip and cook until golden brown on the other side.
  • Place the cooked flatbread in a plate and cover it with a dish cloth while you cook the rest.
