Place the flour, baking powder, and salt in a large bowl. Using a whisk mix until well combined.
With your hand, make a well in the middle, and add the olive oil, honey, and water.
Using a wooden spoon or rubber spatula, mix all ingredients until a dough forms.
Transfer the dough to a floured surface and knead 5-10 minutes until smooth. The dough should be a bit tacky but not sticky. If too dry, add a bit more water, and if it is too sticky, add a bit more flour.
Cover the dough with a clean dish cloth and let it rest for 10 mins
Cut the dough into 6 equal pieces and using a rolling pin, roll each piece into a ¼-inch thick disk.
Heat a skillet or griddle over medium heat, brush it with oil, and place a flatbread (or more if they fit) in the skillet. Cook until golden brown on the bottom, flip and cook until golden brown on the other side.
Place the cooked flatbread in a plate and cover it with a dish cloth while you cook the rest.
