Ingredients

  • 2- 10 oz packages frozen spinach, thawed and squeezed
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp red pepper flakes
  • 2 tsp dried oregano
  • 2 eggs
  • 1 cup milk, 2%
  • ¼ cup butter, melted
  • 1 sweet onion, chopped
  • 1 garlic clove, minced
  • 1- 8 oz package shredded mozzarella cheese

Instructions

  • Grease and flour a 9x13-inch baking dish, and preheat the oven to 375 F.
  • Mix the flour, salt, baking powder, red pepper flakes, and dried oregano in a large bowl.
  • Add the eggs, milk, butter, onion, garlic, spinach, and mozzarella cheese. Mix until well combined
  • Pour into the baking dish, and bake for 30-35 mins or until a toothpick inserted in the middle comes out clean and the top is golden brown.
