Equipment

Ingredients

For the steaks:

  • 4- 4 oz pre-tenderized cube steaks, pounded thin
  • ¼ tsp salt and pepper to taste, for seasoning the meat
  • 2 large eggs
  • ½ cups milk
  • 1 ½ cups all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1 tsp paprika
  • 2 tsp salt
  • Ground pepper to taste
  • Avocado oil for frying

For the gravy:

  • 3 tbsp pan drippings
  • 3 tbsp all-purpose flour
  • ¼ cup heavy cream
  • 1 ½ cup milk
  • ¼ tsp salt and pepper to taste

Instructions

  • Season the steaks with salt and pepper and prepare the dredging station:
    - Combine the milk and eggs in a shallow dish
    - Whisk together the flour, salt, pepper, mustard powder, garlic powder, and paprika
  • Coat each steak with the flour mixture on both sides, then dip into the egg wash shaking off any excess, and then into the flour mixture again, shaking off any excess flour. Transfer the breaded steaks to a plate.
  • Heat the oil in a large skillet over medium-high heat and fry the steaks on both sides until golden brown. Keep in a preheated 200 F oven while you make the gravy.
  • Make the gravy: leave about 3 tbsp of dripping in the skillet and add the flour. Cook until golden brown and whisk in the cream and milk until smooth. Cook until thick, about 4-5 minutes. Serve over the warm steaks.
