1 ½ cans Rotel diced tomatoes with green chiles (15 oz total)
¼cupwater
1-15ozcan black beans, drained and rinsed
1tspdried cumin
½cupgreen onions, sliced
2boneless, skinless chicken breast, diced
Salt and pepper to taste
1cupshredded Colby Jack cheese
Your favorite toppings: sliced jalapenos, sliced black olives, sliced red onion, diced tomatoes, guacamoles, cilantro
Instructions
Dump all ingredients into the crockpot, mix them up and cook for 2 hours on high, or 4 hours on low.
Place nachos in a serving platter, spoon chicken mixture on top, and add your favorite toppings like sliced jalapenos, sliced black olives, diced tomatoes, sliced red onion, guacamole, and fresh cilantro.
Notes
Spoon the topping over the nachos just before serving so they don’t become soggy.
Stir all ingredients together before turning on the slow cooker so everything cooks evenly.
