Hot, flaky, and soft biscuits are one of my favorite breakfast foods. I eat them in a variety of ways. I use them to make little sandwiches with egg and sliced ham, or just drizzled with honey, topped with melting butter or jam. This Baking Powder Biscuits Recipe is easy and quick to make and you will thank me for it!

What’s In Baking Powder Biscuits?

All you need to bake flaky biscuits are a few staples:

  • All-purpose flour
  • Baking powder
  • Sugar
  • Salt
  • Unsalted butter
  • Milk

How Do I Make Baking Powder Biscuits?

  1. Line a baking sheet with parchment paper and preheat the oven to 425 F.
  2. Mix the dry ingredients (flour, baking powder, sugar, and salt) in a bowl until combined.
  3. Cut the cold butter into the dry ingredients using a pastry blender or two knives until it resembles coarse sand.
  4. Make a well in the center and pour in ¾ cup of milk. Stir it using a wooden spoon until combined. Do not overmix it. The dough should be sticky, but if you feel it is too dry, add the rest of the milk.
  5. Transfer this sticky dough to a floured surface and add more flour on top.
  6. Using a floured rolling pin, roll the dough into a ¾-inch thick rectangle.
  7. Using a 2.5-3-inch cookie cutter dipped in flour, cut it into rounds. Reshape the dough until you’ve used the whole dough.
  8. Place the biscuits on the baking sheet, and bake them for 15-20 mins until golden brown.
  9. Brush with melted butter and serve while hot.

What Is The Secret To Making Flaky Biscuits?

The secret is not to overmix the batter! The little pieces of very cold butter scattered throughout the dough will melt while baking, releasing vapor and creating the layers inside the biscuits. If you overmix the dough, you melt the butter and this can’t happen. When adding the milk, mix it in until the dough is just moist enough to come together.

Ingredients

  • 1 tsp salt
  • 1 stick unsalted butter, cold and cut into cubes
  • 1 cup whole milk
  • 2-3 tbsp melted unsalted butter to brush on top

Notes

  1. Use very cold butter to cut into the dry ingredients. This will produce vapor pockets while it melts, making the biscuits flaky.
  2. Do not overmix the dough. Mix it just until the dry ingredients are moist.
  3. Use extra flour for the surface, on top of the rolling pin, and on the cookie cutters so nothing sticks to the batter. Remember it is sticky!
