Ingredients for Easy Butternut Squash Soup:

You probably already have these simple staple ingredients in your pantry:

  • Butter (or olive oil if making a vegan option)
  • Yellow onion
  • Celery
  • Carrot
  • Potatoes
  • Butternut squash
  • Chicken (or vegetable stock for a vegan option)
  • Bay leaf
  • Salt and pepper
  • Heavy cream for serving (or blended silken tofu for a vegan option)

How To Make Easy Butternut Squash Soup

  1. Wash and dice all your veggies. Melt the butter in a large Dutch oven or pot and saute the diced veggies for 5-7 minutes, stirring them occasionally.
  2. Pour the chicken or vegetable stock over the veggies and add salt, pepper, and one bay leaf. Cover and simmer for 30 minutes.
  3. Transfer the cooked veggies to a blender with a little of the cooking liquid. Process the veggies until smooth. Add more stock until you get the desired consistency. Check the seasoning and add more salt and pepper if needed.

Serve with a drizzle of heavy cream and toasted crusty bread!

How Can I Easily Peel The Butternut Squash?

Poke a few holes into the squash and microwave it for 2-3 minutes. This softens the skin a little making it easier to cut. Then, cut into quarters and peel off the skin with a knife.

How Can I Make the Soup Thicker?

When processing the veggies in the blender, do not add all of the cooking liquid. If you feel the soup is too thick, add a little more stock. If your soup is too thin, simmer it for a few more minutes after processing it.
