  • Leftover white rice
  • Sesame seed oil
  • Frozen peas
  • Frozen carrots
  • Frozen corn
  • Onion
  • Garlic
  • Eggs
  • Reduced-sodium soy sauce

How Do I Make Fried Rice With Leftover Rice?

Follow these simple steps and enjoy the best homemade fried rice:

  1. Saute the onion and garlic with the sesame seed oil in a large skillet or wok over medium-high heat for about two minutes. Add the frozen veggies and cook until tender, about 3-4 minutes.
  2. Slide the veggies over one side of the skillet or wok, and pour the beaten eggs on the other side. Scramble the eggs until cooked but soft, and mix with the veggies.
  3. Add the leftover rice and soy sauce, and mix well with the eggs and veggies until the rice is heated through. Serve hot.

What To Add To Fried Rice?

  • You can add shrimp, cooked chicken, steak, pork, cubed ham, or a combination.
  • Add other veggies like bell pepper, snow peas, or bamboo shoots.
  • Broccoli or cauliflower florets can also be added
  • I like to add shredded cabbage as well

Ingredients

  • 4 cup leftover white rice
  • 2 tbsp sesame seed oil
  • ½ cup frozen peas
  • ½ cup frozen diced carrots
  • ½ cup frozen corn
  • ½ cup onion, chopped
  • 2 cloves, minced
  • 2 eggs, beaten
  • cup reduced-sodium soy sauce

Instructions

  • Saute the onion and garlic with the sesame seed oil in a large skillet or wok over medium-high heat for about two minutes. Add the frozen veggies and cook until tender, about 3-4 minutes.

Notes

  1. To make fried rice the authentic way, the wok or skillet has to be very hot before adding the oil, and the oil very hot before you start cooking.
  2. Scramble the eggs away from the veggies. It will not taste the same if you scramble the eggs with the veggies. Mix them after you scramble the eggs.
  3. Freshly made rice doesn’t work as good as cold leftover rice.
